Watermelon Granita

♥ 1kg watermelon, peeled flesh only
♥ 150g unrefined caster sugar

serves 4-6

Place the watermelon and sugar in a food processor and blend until smooth.

Pour the mixture through a sieve and into a bowl.

Pour the contents into a shallow tray (roughly 30cm x 30cm) and place in a freezer overnight.

Remove from the freezer and using a fork, scrape the surface continuosly to form the granita.
Pour into glasses and serve immediately.

Yes, you read the title correctly... I said ICE CREAM CUPCAKES!! The genius site that is called "Baking Bites" has a utterly decadent, delicious sounding recipe for "Creamsicle Ice Cream Cupcakes". Basically they are orange cupcakes that are filled with vanilla bean ice cream and topped with a zesty orange glaze and stored in the freezer for aa insanely delicious summertime treat... I cannot wait to test out this recipe!! yes, Glamour Whore can bake and cook!! Quite well actually...

"Creamsicle Ice Cream Cupcakes"

The recipe via "Baking Bites"

"Creamsicle Ice Cream Cupcakes"

1 1/3 cups all purpose flour
1 tsp baking powder
1/4 tsp salt
1/4 cup butter, room temperature
3/4 cup sugar
2 large eggs
1/4 cup vegetable oil
1/2 cup orange juice (pref. freshly squeezed)
2 tsp orange zest (or 1/2 tsp orange extract)
1 tsp vanilla extract

Filling
1 1/2 – 2 cups vanilla bean ice cream, slightly softened

Orange Glaze
2 cups confectioners’ sugar
3-4 tbsp orange juice (pref. freshly squeezed)

Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together flour, sugar, baking powder and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs, one at a time, followed by vegetable oil.
Stir half of the dry ingredients into the egg mixture, followed by the orange juice, orange zest and vanilla extract. Stir in remaining dry ingredients, mixing just until no streaks of flour remain.
Divide batter evenly into prepared muffin cups.
Bake for about 15 minutes, until a toothpick inserted into the center of each cupcake comes out clean and the top springs back when lightly pressed.
Cool completely on a wire rack before filling and frosting.

When cupcakes are cool, hollow them out using the cone method (fully explained, with photos, here).
Simply insert a small knife to cut a “cone” of cake out of the center of each cupcake. Cut off the pointy end of the “cone” and save the top. Make the holes large to fit a generous amount of ice cream.
Fill each hollowed out cupcake with 2-3 tbsp softened vanilla bean ice cream, then replace the tops. Freeze for 15 minutes to allow ice cream to set up before glazing.

To make glaze, whisk together confectioners’ sugar and orange juice until a thick, smooth consistency is reached. Add additional juice to thin the glaze, if needed. Drizzle a generous spoonful over each cupcake, and return cupcakes to freezer to chill before serving.

Sushi Lover! #1

Hi everyone… my name is Karen… and I’m a Sushi Lover. Oh YES I AM!

Last Saturday I had homemade Sushi, and boy was it good. Aya my housemate, did like a goodbye gathering + pre-birthday celebration, I will tell you more details when I do my month of July resume in Prague. I like Sushi I really do, and since I’ve been here in Prague, I only ate twice! First time, somewhere in April if I’m not mistaken, with Plamina, Sushi Buffet, it was great, but then it came the bill, almost 20€ for a Sushi Buffet (for each of us) GEEZAUS!  And the 2nd time at Aya’s gathering.  I even made one roll yeahi :D lol

I want to buy all of this... some people call it cheating buuutttt, I just called making our lifes easier :p.

How to make Sushi Rice
Now I'm not a Sushi expert, but I thought when you put the vinegar on the rice, you should have a little thing (I forgot the name in English) that you wave at the rice really fast so that rice receives cold air....

I FUCKING LOVE JEDWARD

Reflection (by Alan Cotter)

““A few light taps upon the pane made him turn to the window. It had begun to snow again. He watched sleepily the flakes, silver and dark, falling obliquely against the lamplight. The time had come for him to set out on his journey westward. Yes, the newspapers were right: snow was general all over Ireland. It was falling on every part of the dark central plain, on the treeless hills, falling softly upon the Bog of Allen and, farther westward, softly falling into the dark mutinous Shannon waves. It was falling, too, upon every part of the lonely churchyard on the hill where Michael Furey lay buried. It lay thickly drifted on the crooked crosses and headstones, on the spears of the little gate, on the barren thorns. His soul swooned slowly as he heard the snow falling faintly through the universe and faintly falling, like the descent of their last end, upon all the living and the dead.””

- James Joyce

The original census returns for 1861 and 1871 were destroyed shortly after the censuses were taken....

Well, I’m back from making an ass of myself in other countries. Regular updates will return next week (no promises).

#182 ???? (Fall In Love!!) by John&Fish on Flickr.

Too lazy to get out my laptop when I first arrived in Taiwan. Too lazy to get it out until today, which is 5pm Taiwan time (2:50am LA time). x)

Managed to do a bit of my math homework and read a few pages of Wuthering Heights on the plane trip although this girl in the aisle across kept staring the entire time :( She was blatantly staring at me, Nee, and Mimi and didn’t even bother to look inconspicuously. It was very uncomfortable and I found it a bit rude although I didn’t say anything or stare back at her like Mimi and Nee did because I didn’t have the gall to.

Well, I downloaded Letters to Juliet on my itouch the day before and I finally got to watch it! Hehhe. I also finally watched I am Number Four on the screen thingy that they put on the back of one’s seat. They had all sorts of music.. Country, pop, oldies, Korean, Japanese, Cantonese, Mandarin, Indies, etc. Very cool. Only took a picture of the Korean one since Nee was already listening to it so this is her screen. She was listening to GDragon and Top.

For lunch, they even included a mini Haagen-Dazs bar! It was soo frozen, though.. But even so, I liked it =D They also provided cup noodles!! I was so excited.. It was so small and cute!

The flight attendants were so nice but I kept accidentally knocking into them :( But it was so embarrassing because I was pulling my shirt down from behind and smacked a flight attendant on her butt. And the first flight attendant accidentally punched me in the face LOL hahha man.. I have embarrassing experiences.

I slept a lot on the two flights. I didn’t mean to sleep that much and I meant for the flight to Hong Kong and the flight transferring to Taipei to be used productively. Ahh, disappointing. I need to force myself to concentrate on summer homework while I’m over here.

We went to bed at about 3am because of the jet lag. I was still sleepy but I decided to eat noodles =D Stomach over sleep.

Barry Estabrook - 'Tomatoland' - How Industrial Farming 'Destroyed' The Tasty Tomato : NPR:

Lucky for us, we’re enjoying fresh Georgia tomatoes at the moment. But this story on commercially grown tomatoes from Florida explains why so many of the tomatoes we get in grocery stores lack flavor:

If you bite into a tomato between the months of October and June, chances are that tomato came from Florida. The Sunshine State accounts for one-third of all fresh tomatoes produced in the United States — and virtually all of the tomatoes raised during the fall and winter seasons. But the tomatoes grown in Florida differ dramatically from the red garden varieties you might grow in your backyard. They’re bred to be perfectly formed — so that they can make their way across the U.S. and onto your dinner table without cracking or breaking.

From June 1: Colonel Koba Bochoroshvili of the Georgian Border Police in a convoy, somewhere over Kakheti, on the way back from bringing troops to border posts along Chechnya and Dagestan

I submitted some photos to CNN yesterday for an iReport and when I got home from work, I received an email from the Assistant Producer of CNN International asking if they could use my photos for a future gallery on Georgia! They really liked my photos and want to use them! I am so excited to be recognized as a serious photographer with talent and to be included on such an important news site! But more importantly, I’m excited to have such a good industry contact! Perhaps this will lead to bigger and better things! It’s a great day to be me!

See the photos see the photos they will be using here!

SONG Virginia SOMOS Georgia Solidarity EventRepublican mayor in the South becomes unlikely advocate for immigrants - CNN.com:

Excellent story by Catherine Shoichet of CNN:

[Conservative Republican Paul] Bridges [mayor of Uvalda, Georgia] is one of more than a dozen plaintiffs suing Georgia and its governor, trying to stop the state’s new immigration law. They won a reprieve Monday when a federal judge temporarily blocked parts of the law scheduled to go into effect July 1.

More from June 1: commuters and border patrol, hitching a ride down the mountains, somewhere over Kakheti, Georgia. With the roads closed for winter, the border police helicopters are the only way for villagers in the high Caucasus to get medical help and more.

Illegal Immigrant Youth 'Come Out' for Reform:

What these students are doing is really, really brave and great.

BUT WHY WOULD THE ASSOCIATED PRESS (WHICH IS SUPPOSED TO BE NEUTRAL) ADD THAT COMMENT ON HOW IF THE STUDENTS STAY IN AMERICA THEY WILL BE TAKING AWAY JOBS?????

ARGH. This is supposed to be a story on how these students are speaking up for themselves and you have to go and add that? It’s disgusting. They are standing right in front of you and you still refuse to see the issue with a human aspect.
